Plov (sometimes also called “osh”) is widely considered to be the national dish which is cooked for each event in Uzbekistan. It is a heaping portion of rice that has been cooked together with lamb or beef, onions, garlic, raisins and carrots. Plov is not only the most famous dish in Uzbekistan, but it is also one of the most delicious. Each city in Uzbekistan has its own unique recipe for cooking pilaf. Barak are Uzbek dumplings. Barak is the name of the Samarkandian version of Uzbek dumplings. In different parts of Uzbekistan, this dish has different names. In Tashkent the name of this dish is chuchvara, in Bukhara the name of this dish is dushpara, and in Samarkand the name is barak.
Another extremely
popular food in Uzbekistan, manti (or “mantu”), is large steamed dumplings
filled with ground lamb or beef. Extra fat is often added to the dumplings to
enhance the flavor.
They are served
with yogurt for dipping.
Kazan kabob is an
Uzbek dish traditionally prepared in a kazan, a large cooking pot commonly used
in Central Asian and Balkan cuisines. The kazan is the same pot used to make
plov.
It consists of marinated meat like mutton or beef that’s pan-fried first with potatoes before being covered and steamed in a kazan at low heat. When fully cooked and tender, it’s traditionally served with onions and fresh vegetables.
To’y kabob is a
dish prepared in and around Samarkand for wedding celebrations. Tender beef,
some vegetables, juicy tomatoes and spices, and to’y kabob is ready to be eaten
with great pleasure 😊
